Number of Servings: 22


    2 cups fine white corn meal
    1 cup evaporated milk
    1 cup water
    2 eggs
    1 tsp. salt
    1 tsp. baking powder
    1/2 tsp. baking soda


Mix dry ingredients together.

In separate bowl, beat together eggs, evaporated milk, and water until well blended.

Slowly add wet ingredients to dry ingredients, mixing well. You will have a thick, almost paste-like batter.

Heat a non-stick skillet or a pan sprayed with non-stick cooking spray, and add batter by large spoonfuls. Cook as you would a pancake.

If you like, you can also fry these in a couple of tablespoons of extra-light olive oil.

Makes approximately 22-24 small corn cakes.
