    Zucchini, 3 cup, sliced
    Egg, fresh, 3 large
    Applesauce, unsweetened, .5 cup
    *Canola Oil, .25 cup
    *Wheat flour, white, bread, enriched, 2.25 cup
    Brown Sugar, .5 cup, packed
    Granulated Sugar, .75 cup
    Baking Soda, 1.5 tsp
    Baking Powder, .78 tsp
    Cinnamon, ground, 2 tbsp
    Nutmeg, ground, .25 tsp
    Lemon Peel, .25 tsp
    Orange Peel, .5 tsp
    Salt, 1 tsp
    Raisins, 1 cup, packed
    Walnuts, .5 cup, chopped


Preheat oven to 325F. Grease the top of your muffin pan and fill with muffin cups.
Grate zucchini, ring water out. In a large bowl, add zucchini, eggs, oil, applesauce, spices, and sugar. stir to combine. In a separate bowl combine dry ingredients, including raisins and walnuts, Add the dry ingredients to the wet and stir just until combined. Scoop about 1/4-1/3 of the batter into each cup. bake for 22-28 minutes. nom.
