    2 eggs
    220g coconut sugar
    112g flour (I used 1/5 coconut flour and 1/2 gluten free self-raising flour)
    1.25 tbsp cocoa powder
    85g melted butter
    1 beetroot about 90g grated
    30g walnuts toasted


Preheat oven to 160DC
beat eggs and sugar in a large bowl until thick. Sift flour & cocoa powder together and fold into egg mixture. Fold in butter and stir well. Add grated beetroot and walnuts and stir until smooth. Spoon in to greased tin (or muffing cups) and bake for about 40-55 minutes, until cooked. Eat
