Ingredients

    2 defrosted chicken breasts
    1 can sweet yellow corn, with liquid
    1 can northern beans, with liquid
    1 can black beans, with liquid
    2 small jars of salsa
    1tblspn cilantro, finely chopped
    1tblspn cumin powder or seed
    1tblspn chili powder

Directions

Boil chicken breasts until fully cooked, cool slightly and pull apart into bite size pieces. Meanwhile, combine all other ingredients into medium-sized pot and bring to boil. Turn down temperature, add chicken and simmer for 2 hours. Medium pot serves 6. Serve with shredded cheese and tortilla chips, if desired.
