Number of Servings: 5


    2 cups instant rice, cooked.
    2 boneless skinless chicken breasts, cubed.
    .5 cup sliced mushrooms
    .5 cups chopped onions
    3 large eggs, beaten
    2 tbs canola oil
    2tbs soy sauce
    5oz mixed frozen (or fresh) veggies.


Cook rice, set aside.

Cook chicken, set aside.

Add oil, mushrooms, onions and mixed veggies to skillet and saute until tender (defrost if using frozen veggies).

Add cooked rice and soy sauce. Cook 10 minutes.

Add eggs. Cook 3 more minutes.

Serve as an entree or a side.

Serving Size: Makes 5 1-cup servings.
