Introduction

My favorite cauliflower soup with a lower carb twist. My favorite cauliflower soup with a lower carb twist.
Number of Servings: 8

Ingredients

    1 head of cauliflower
    Small carrot
    Stalk of celery
    2 quarts chicken broth
    2 cups of cream
    2 tablespoons of butter
    Parsley, salt, and pepper to taste.
    Sour cream to taste when serving

Directions

Chop all vegetables. Cook carrots, celery, and onion in butter until soft, add cauliflower and parsley. Let vegetables simmer for 15 minutes, then add broth and heat until boiling. Reduce heat to low then add cream and spices. Cook for 15-20 minutes. Serve with a dollop of sour cream.
