Ingredients

*2 1/2 cups cooked black beans, canned or fresh
*1 cup cooked brown rice
*2 tbsp. extra virgin olive oil
*1 cup vital wheat gluten
*1 cup water
*5 chipotle peppers, canned in adobo sauce, chopped
*4 cloves fresh garlic, chopped
*1 tsp. liquid smoke
*juice of 1/2 lime
*1 tbsp. fresh cilantro, chopped
*salt to taste
Directions
1. Preheat oven to 375* Spray a cookie sheet with nonstick cooking spray, and set aside.
2. Mix together black beans, brown rice and extra virgin olive oil. Mash mixture with a fork or potato masher until most of the black beans are mashed.
3. Add in the rest of the ingredients, mixing with a spoon until strings of gluten start to form.
4. Form patties by hand by rolling bean mixture into balls, and then flattening them. Recipe will make 6 large burgers, or 8 smaller burgers. Burgers should be about 1/2" thick.
5. Place the burgers on the cookie sheet. Cook for 20 minutes, turn burgers over, and then cook for another 10 minutes, or until brown and crispy on top.
6. Serve with corn or tomato salsa. Enjoy!
