Number of Servings: 4

Ingredients

    6 beets, (2 1/2 inch diameter), scrubbed and trimmed -
    4 cloves garlic, unpeeled
    3 tsp olive oil
    1 tbsp fresh chives, chopped
    1/4 tsp salt
    1/4 tsp pepper

Directions

1. Preheat oven to 425 degrees F.
2. Place beets and garlic in a small roasting pan. Pour 1 tsp of olive oil over veggies and stir to coat. Cover the ppan with aluminum foil and bake until the beets are tender when pierced with a sharp, thin-bladed knife, about 45 minutes.
3. Let stand just until cool enough to handle, 5 - 10 minutes. Using a paring knife and your fingers, peelthe beets and cut them into bite-size pieces. Place them in a bowl.
4. Peel the garlic, chop it and add it to the bowl with the beets. Add the remaining 2 tsp. olive oil, the chives, and the salt and pepper. Stir to combine. Serve.
