Yummy and healthy, this muffin makes a great snack or part of a good breakfast. Yummy and healthy, this muffin makes a great snack or part of a good breakfast.

    1.5 cups fresh apples, peeled and grated
    1 tsp cinnamon
    .5 tsp nutmeg'.25 tsp allspice (can omit)

    1.5 cup white flour
    1 cup whole wheat flour
    4 tsp baking powder
    1 tsp salt
    1 tsp cinnamon
    .25 cup canola oil
    1 cup sugar
    2 eggs, large
    1 tsp vanilla
    .75 cup skim milk
    .5 cup chopped dates (can use brown sugar)


Combine apples with first 4 spices. Set aside.
Add chopped dates to measured milk. Set aside.

In large mizing bowl, cream oil with sugar, add eggs and vanilla.
Sift remaining dry ingredients together.

Add dry ingredients alternately with milk/date mixture to creamed mixture. Add apple mixture.

Spoon batter into muffin tins. Bake on center rack for about 20 minutes, until toothpick comes out clean and tops are golden brown. Cool before serving.

FOR BREAD: Do not add apple mixture to batter. Spoon half the batter into a laof pan. Top with half the apple mixture. Repeat.
Bake 45mins - 1 hour.
Cool before serving.
