    * Pork Tenderloin, 12 oz (remove)
    * Olive Oil, 1 tbsp (remove)
    * Onions, raw, 1 cup, chopped (remove)
    * Carrots, raw, .5 cup, chopped (remove)
    * Celery, raw, .5 cup, diced (remove)
    * Garlic, 1 clove (remove)
    * Swanson Chicken Broth 99% Fat Free, 3 cup (remove)
    * Old Elpaso, 4.5 serving (remove)
    * Bush’s Garbanzos Chick Peas, 3.5 serving (remove)


Cut the pork into chunks. Season the pork with salt & pepper. Heat a 2qt sauce pot over high heat add the oil & pork. Cook on high until the pork is brown all over but still raw in the center. Remove pork from pan. Place pan back on the burner over medium heat, add onions, celery, carrots & garlic; cook for 5 mins. Add the enchilada sauce & stock and bring to simmer. Add beans & liquid cook for 10 mins. Add pork back to the pan & simmer until the pork is cooked to medium.
