A quick and easy, light meal. A quick and easy, light meal.

    1 15 oz can Spinach - drained dry as possible
    2 - 3 egg whites
    1 oz cheese of choice (figured using half 2% velvetta and half cheddar) shredded
    1/2 Tbsp unsalted butter
    1/2 tsp black pepper


Mix drained spinace and egg together. Melt butter in skillet of sufficient size for ingredients. Pour spinach and egg in to scramble. As egg is about fully cooked and spinach is getting hot through, add cheese and black pepper. Finish cooking until egg is done and cheese melts. Serve hot. I like it with just a slice of buttered toast.

Serving Size: 2 1/2 cup servings
