Ingredients

    4 4-oz pieces Talapia
    1/4 cup Parmesan cheese
    1 tbsp Smart Balance margarine
    1 tbsp lemon juice
    1/8 tsp ground black pepper
    1/8 tsp Salt Sense
    1 tbsp low fat mayonnaise
    1/ tsp onion powder

Directions

1. Preheat broiler. Grease a broiling pan, or line pan with aluminum foil.

2. In a small bowl, mix together the parmesan, margarine, mayonnaise and lemon juice. Season with pepper, onion powder and salt. Mix well and set aside.

3. Arrange fish fillets on prepared pan. Broil a few inches from heat for 2-3 minutes. Flip fillets over carefully and broil for about 2-3 minutes more. Remove fillets from oven and cover them with the parmesan cheese mixture on top side. Return to broiler for 2 more minutes or till topping is browned and fish flakes easily with a fork. Be careful not to overcook the fish.

    I used basa fresh water fish. Used plain Greek yoghurt and seeded mustard and onion flakes in the cheese mix. Watched the fish so that it would not be overcooked or burn. The group I shared this with loved it. Served with rice salad:radish, capsicum and celery.Perfect combination! - 5/10/14
