    1 tsp Olive Oil, 1 1tsp
    Garlic, 1 clove, minced
    Spinach, fresh, 2 cup
    1 oz Athenos Reduced Fat Feta Cheese, 1 oz
    Kroger Break-Free Egg Product, 1 1/4 cup
    Red Ripe Tomatoes, 4 oz, diced
    salt and pepper to taste


in a non-stick pan with lid saute garlic in olive oil for 1 minute. Add spinach and cook until completely wilted. Add egg product and stir with a rubber spatula until it begins to set. Add tomato and crumbled feta. Cover pan with lid and cook on low for 5-10 minutes or until set.
