1 cup shredded zucchini
1/2 cup pureed zucchini
1/4 cup erythritol
1/4 tsp powdered stevia
1/2 cup coconut flour
3 egg whites
1/4 tsp. guar gum
1/4 cup water
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp ground cinnamon
1/2 cup walnuts
Directions
Combine wet and dry ingredients in bowls. Stir together wet and dry ingredients until not lumpy.
Pour into greased muffin tin. Cook at 350 degrees F for about 25 min.
