Number of Servings: 10

Ingredients

    2 cups whole wheat flour
    1 tsp. baking soda
    1/2 tsp. salt (sift all together)

    cream 1/2 C. apple sauce
    1C. sugar
    2 eggs
    1C. mashed bananas

    combine 1/3 C. milk
    1 tsp. lemon juice

    Add 1/3 dry ingred. to banana mix then 1/3 milk mix, alternate 1/3 of each. Blend well after each addition.

    Grease and flour a loaf pan. Bake at 350 for 60-70 min. Cool 10-15 min. then remove from pan.

Directions

Makes 10 half inch slices. This recipe is best for high altitude cooking, may have to alter for lower than 5000 ft. cooking. Nuts or raisins can be an option.

    This recipe was my first attempt at baking in a higher altitude. The bread came out moist and delicious. - 4/6/09
