    Summer Squash, 1 large , sliced thinly
    Onions, raw, 2 cup, sliced
    Mushrooms, fresh, 2 cup, pieces or slices
    Red Ripe Tomatoes, 2 cup, chopped or sliced
    Mozzarella Cheese, part skim milk, 1/2 cup to 1 cup

    Salt, 1 tsp
    Pepper, black, 1 dash

    Oregano, ground, 1/4 tsp
    Basil, 1/4 tsp
    Powdered Parmesan Cheese, 3 tsp
    *Panko crumb coating, 1/4 cup


layer veggies in a baking dish sprayed with cooing spray. Sprinkle salt, pepper and cheese between the layers. Mix crumbs with spices and Parmesan and sprinkle over top. Bake at 375 degrees for 40 to 45 minutes.
