Ingredients

1 lb. extra lean ground beef, cooked
1 onion, chopped
3 tbsp. oil
2 c. 2% Milk Cheddar Cheese ,grated
13 6" corn tortillas
4 c. water
2 packages dry enchilada sauce mix (in Hispanic Food Section)
salt and pepper to taste.
Directions
Cook ground beef and onion together until no longer pink. Sprinkle 2 tbs of dry enchilada sauce mix and stir in to season, season with salt and pepper. Set aside.
In small skillet, heat the 3 tbs oil, quickly dip each tortilla in and let cook for 5 seconds. Take out and blot on paper towel. cover to keep soft. Combine water and enchilada sauce, bring to a boil. Pour 1 c of sauce into greased casserole dish, spread around. Take 1 tortilla lay in dish, place 1/4 c. ( or so) of meat in tortilla and roll up, continue with all tortillas. Pour remaining sauce over enchiladas in pan, top with cheese. Bake in 375 degree oven for 20 minutes or until cheese is melted and sauce is bubbly.
