    2 eggs - beaten
    1 cup skim milk
    1/2 cup olive oil (or salad oil)
    1 tsp. vanilla extract
    3 cups whole wheat flour
    1 cup sugar
    4 tsp. baking powder
    1 tsp. salt
    2 cups frozen raspberries


Makes 18 muffins

Preheat oven to 400 F.

Mix together eggs, milk, oil, and vanilla. In a seperate bowl, mix powder ingredients: flour, sugar, baking powder, and salt. Add powder mixture to moist mixture - blend well. Fold in raspberries.

Spoon dough into paper-lined or greased muffin tin. Bake at 400 F for 15-20 minutes, depending on oven and desired gooiness.
