Introduction

Ingredients

    1 graham cracker crust (already prepared)
    OR 2 cups graham cracker crumbs mixed with 1 cup butter
    1 package whipped topping (makes 2 cups)
    1 package fat free cream cheese (softened)
    1 cup icing sugar
    1 can diced pineapple

Directions

If you are making your own graham cracker crust, mix the crumbs with the butter and line a square pan. If not, use the pre-made crust and set aside.

Prepare the whipped topping and refrigerate while making the cheese mixture. If you are using the frozen topping, make sure it is thawed.

In a bowl, mix the cream cheese and the icing sugar until smooth. Add the whipped topping and gently fold in the pineapple. (I added in a second can to give it even more pineapple flavour!) Pour the mixture evenly over the crust and refrigerate until cold.

When I tried this recipe it was not as hard as say a cheesecake, so I found the best way to serve it was to cut it into squares and place them on muffin cups to serve individually. You can also cut them into bigger squares and plate them like a cake.

Makes 16 2 x 2 inch pieces.
