    1 package of tripe
    1 1/2 to 2 large onions sliced
    3 bell peppers green, red, yellow
    about 6 tbsp extra vergin olive oil
    1 1/2 can diced tomatoe
    1 glass of water


put oil in a large skillet and heat. Add onions and cook until translucent. Add sliced peppers and cook until soft. Add tomatoes and cook for 15 minutes. Add sliced tripe previously cooked in water (for about 1 hour). Add salt and pepper to taste and add about 1 glass of water. Lower the flame to slow and cook for about 1 to 1 1/2 hour. At the end I like to put about 1/2 tbs of sugar (grandma secret)
