    Craisins Orange Flavor, 0.33 cup
    Craisins Cherry Flavor, 0.5 cup
    Walnuts, .25 cup, chopped
    Bob's Red Mill Whole Wheat Flour, 1.5 cup
    Baking Soda, 1 tsp
    Baking Powder, 1.25 tsp
    Splenda, 0.75 cup
    Cinnamon, Ground 1 tsp
    Vanilla Extract, 1 tsp
    Orange Extract, 1 tsp
    Better N Eggs (egg whites), 0.5 cup
    8th Continent Light Soy Original, 4.0 oz
    Unsweetened Applesauce, 0.5 cup


Preheat oven to 350 or 325 for convection ovens.

In Large bowl mix all dry ingredients, walnuts, and craisins (I like to use 1 cup whole wheat flour and 1/2 cup Amaranth flour to give it a nutty flavor). In a medium bowl mix vanilla and orange extracts, applesauce, soy milk and egg whites (you can substitute regular milk). Combine wet and dry ingredients and mix until all ingredients are combined, but do not over mix. Pour into lined muffin pan and bake for 13-16 minutes or until a toothpick inserted in center of muffins comes out clean. Let cool a few minutes on a wire rack. Store leftovers in the refridgerator... I like to heat them in the microwave for 15 seconds to give them the "Fresh out of the oven" warmth and taste.
