Introduction

approx 1/2 cup batter for each pancake approx 1/2 cup batter for each pancake

Ingredients

    Flour 'Gold Medal', 1 cup
    Baking Soda, .5 tsp
    Baking Powder, 1 tsp
    Granulated Sugar, 3 tsp
    Salt, .25 tsp
    Egg, Fresh, Extra Large, 1 egg (56g), 1 serving
    Vanilla Extract, .25 tsp
    Unsalted Butter, 2 tbsp, melted
    Buttermilk, lowfat, 1.25 cup
    *Shortening, Crisco, 1 tbsp

Directions

- Mix first 5 dry ingredients into bowl
- In another bowl beat egg, add vanilla, add buttermilk. Temper in melted butter.
- Whisk wet bowl into dry bowl. Do not overmix. Let rest an 1 hour.
- Lightly grease griddle with shortening. Pour pancakes, 1/2 cup of batter per pancake, onto griddle. Flip pancake once covered with bubbles. Cook another minute on the other side.
