    3-4 C Frozen Watermelon Cubes
    A large handful of fresh Mint
    5 Limes
    2 Tbs Splenda
    6 oz Light Rum

    Garnish with a wedge of watermelon, a lime slices and/or sprigs of mint.


Preparation: Cut the watermelon into small cubes. Put into a heavy zip lock freezer bag and freeze until ready to use.
Squeeze 4 limes to get 6 full tablespoons pf juice.

Place frozen cubes in a blender. Blend until smooth.

In a small pitcher, combine fresh mint leaves and fresh lime juice. Using the handle of a wooden spoon, smash the lime and mint leaves several times to release the oils from the mint.

Pour rum and the blended frozen watermelon into the pitcher and stir gently. Add Splenda to sweeten to taste.
Garnish with a wedge of watermelon, a lime slices and/or sprigs of mint.

Fill four tall glasses (such as Collins glasses) with ice and divide the mojito amongst the glasses. Garnish with lime slices and mint sprigs, and serve immediately.
