    2 lb cubed pork
    3 T olive oil
    3T flour
    3T capers
    1 T + 1t cumin powder
    1.5 cups chopped onions
    6 cloves garlic, chopped
    2 cups low sodium chiken broth
    1/2 cup white wine
    2 cups cooked black beans
    2 sweet potatoes, diced
    1/2 cup chopped fresh parsley
    1/2 cup chopped cilantro


Cut pork into cubes. Brown in oil. remove from heat to a roasting pan and sprinkle with flour. cook for another 3 minutes. Heat oven to 350F. Add broth, wine, 2 tbsp capers, 1 tbsp cumin powder, potatoes, 1/2 of garlic and onions to roasting pan. cover and cook in oven for 1 hour. Add remaining capers, beans, another teaspoon of cumin and rest of garlic along with salt and pepper to taste. put back in oven uncovered for 15 minutes. stir in chopped cilantro before serving.
