Introduction

You can do so much with this recipe. Add mushrooms, peppers, olives, more cheese, less cheese, etc!! Great as a single dinner or cut to make appetizers. You can do so much with this recipe. Number of Servings: 1

Ingredients

    1 Whole Wheat Tortilla
    2 cups fresh baby spinach
    1/2 Tbs. Butter (unsalted)
    1 clove garlic, minced
1 tsp Mrs. Dash (I used the tomato, basil, garlic)
3 Tbs. Feta (add the salty flavor, use more or less depending)
    1/4 shredded Mozzerella
    1/4 cup fresh diced tomato

Directions

Toast whole wheat tortilla on a griddle. Meanwhile, melt butter in a skillet. Add garlic, Mrs. Dash and Spinach. Cover to allow spinach to wilt. Toss in Feta and then top onto the toasted tortilla. Top with mozzerella and tomatoes. Broil to desired doneness (I do just until the cheese is melty and slightly browning!) Burns quickly so don't let it out of your sight ;) Notice my picture!! Hahaha!!

I usually enjoy as a lunch or dinner entree but you may also cut into slices for appetizers too.

Serving Size: makes 1 single serve pizza or 4 appetizers
