Ingredients

    4 TBS EVOO (divided)
    3 carrots
    1 zucchini
    1 yellow squash
    1 yellow bell pepper
    1 TBS flour
    grated ginger
    1 c chicken broth
    2 TBS soy
    1.5 c prepared brown rice
    2 eggs, scrambled
    3 slices ham, diced

Directions

Heat 1 TBS oil. Add carrots and sautee 2 min. Add bell pepper, saute 1 min. Add squash and sautee 2-3 min until crisp tender. Remove from pan. Grate ginger in pan with 1 TBS oil and cook 30 seconds. Add flour and brown in oil for 30 sec. Add 1 c chicken broth and soy and deglaze the pan. Simmer sauce until thickened. Pour over veggies. Place 1 TBS oil in pan and scramble egg. Add remaining oil, ham, and rice and cook for 2-3 min. Pour veggies & sauce over rice and serve.
