Introduction

Subbing unsweetened applesauce for butter lowers the total fat content, yet still creates a super moist product. The addition of Medjool dates livens the bread up and the wheat germ provides extra nutrition (protein, vitamins, fiber, potassium, etc.). Ingredients

    Bread Flour
    Whole Wheat Flour
    Over-ripened bananas
    white sugar
    brown sugar
    butter
    unsweetened applesauce
    baking soda
    baking powder
    salt
    cinnamon
    eggs
    vanilla extract
    medjool dates
    wheat germ

Directions

Melt 1/8 cup of butter; set aside to cool. Chop 10 dates into bite sized pieces; put aside. Sift together flours, leavening agents, cinnamon and salt; set aside. Mix bananas, sugar, applesauce, eggs and vanilla extract. Combine set aside dry ingredients and 1/4 cup wheat germ into wet and mix just until incorporated. Pour batter into prepared baking dish.

Bake in regular sized loaf pan at 325F for 1 hour 20 minutes.
