Ingredients

    Corn Tortillas, 12 tortilla, medium (approx 6" dia) (remove)
    Cheddar Cheese, 1 cup, shredded (remove)
    Cottage Cheese, Nonfat, 500 grams (remove)
    *Rosarita no fat Traditional refried beans (serving 0.5 cup), 1.5 cup (remove)
    Onions, raw, 1.5 cup, chopped (remove)
    *Turkey, Ground turkey, 93% lean, 16 oz (remove)
    La Victoria Enchilada Sauce, 3 cup (remove)
    Garlic, 3 clove (remove)
    Jalapeno Peppers, 2 pepper (remove)
    Beans, black, 1 cup (remove)
    1/2 cup chopped cilantro
    Salsa, 1.5 cup (remove)
    Yellow Corn, 1.5 cup (remove)
    Toasted cumin, chili flakes, chili powder or ancho powder
    salt and pepper to taste

Directions

Saute Turkey, add onion and garlic. Add spices (approx 1 tbsp ea or to taste) and 2 c enchilada sauce. set aside.
in separate bowl combine beans, corn, cilantro, and jalapenos. in another dish combine refried beans and cottage cheese.
in 9 x 13 pan coat bottom with 1 cup enchilada sauce. cut 3 tortillas and arrange as next layer. Cover with meat mixture.arrange 3 more tortillas.cover with bean and corn mixture. arrange 3 more tortillas and cover with refried bean mixture. arrange last 3 tortillas and top wiith salsa and cheddar. bake at 350 until hot and bubbly. remove from oven and let sit 10 -15 minutes before serving.
