    2 cups chicken broth
    1 tsp crushed garlic
    1 cup quinoa

    1 can (12.5 oz) white meat chicken
    .5 cup sliced kalamata olives
    .5 cup crumbled feta cheese
    .5 cup frozen chopped spinach
    tsp dried parsley
    tsp dried chives
    .5 tsp salt
    .5 cup fresh lemon juice
    .25 cup Ken's Balsamic salad dressing


Bring broth and garlic to a boil.
Add quinoa, reduce heat and cover, and simmer for 20 minutes (until broth is absorbed).
Scrape into a large bowl.
Gently stir in remaining ingredients until evenly mixed.

Serving Size: Makes eight 1/2 servings for a side dish, or four 1 cup serving for a meal. (Nutrition is based on 1/2 cup serving)
