Ingredients

    1 pork tenderloin (about 1 lb) trimmed
    .25 cup onion, chopped
    1/4 cup fresh pineapple chopped
    3 cloves garlic
    3 chipotles in adobo sauce, sliced with 1 tbsp sauce reserved
    1 tbsp red wine vineger
    1/3 cup olive oil
    1/4 tsp cayenne pepper
    1 tbsp cumin
    1 tsp smoked paprika
    1/2 tsp ancho chili powder
    1 tsp coriander
    1 tsp dried oregano

    SERVE WITH

    Pineapple salsa
    Guacomole
    Tortillas
    Fresh cilantro

Directions

In the bowl of a food processor, combine all ingredients except the pork tenderloin. Pulse until a thick paste forms. Place the pork tenderloin in a large plastic bag and add the marinade. Place in the refrigerator for 1 hour before grilling.

Grill the tenderloin over medium heat for 35 to 40 minuts, until the centre of the tenderloin registers 150 degree F. Let the meat rest for 5 minuts before slicing into thin medallions. Serive in soft torillas with pineapple salsa, guacamole, and a little fresh cilantro
