Introduction

Ingredients

    80g Onion, chopped
    115g Celery, chopped
    80g Yellow bell peppers, chopped
    2 cloves garlic, crushed
    465g (8) Tesco Lighter Choices Cumberland Sausages, chopped

    Sauce:
    1 can tinned tomatoes + water
    Squirt of Heinz tomato ketchup
    Squirt of sweet chili sauce
    Dash of Lea and Perrins
    Sprinkle of Italian herbs, salt and pepper

    Cheese sauce:
    30g Mozzarella and cheddar cheese
    30g Parmasean cheese
    30g Semi-skimmed milk
    1 egg

Directions

Pre-heat oven to 220C (fan oven)

1.Slice onion, celery and bell peppers and cook in frying pan. Add crushed garlic.

2. Slice sausages into small pieces. Add to pan and brown.

3. Add can of chopped tomatoes, re-fill with water and add to pan.

4. Add Italian herbs, salt, pepper, ketchup, sweet chili sauce and Lea and Perrins to taste, and simmer on low heat.

5. Mix cheeses, milk and egg together to make sauce.

6. Make-up lasagne:
- Add layer of sausage sauce to baking dish
- Place sheets of lasagne
- Add second layer of sausage sauce
- Add top layer of lasagne
- Cover with cheese sauce
[Alternatively, also add slices of mozzarella and slices of courgette on top].

7. Cover in foil and bake in oven for 20 minutes.

8. Uncover and bake for a further 20 minutes until cheese is golden.

9. Cover with spinach and bake for a further 5-10 minutes on a lower heat (e.g. 100C).

10. Take out of oven, and serve.

To serve, try a healthy side-salad or, for a more unhealthy treat, garlic bread. Enjoy :)
