Ingredients

    Rice Noodles (58 gram 1/2 cup), 1 Box
    *Extra Virgin Olive Oil, 4 tbsp -- divided
    Egg, fresh, 1 large
    Shrimp, cooked, 8 oz
    Calamari Rings (raw) 8 oz
    Scallions, raw, 4 large chopped
    Mushrooms, fresh, 1 cup pieces
    *Peppers, sweet, red, fresh, 1 cup, chopped
    Pad Thai Sauce 1Pkg=3.25 oz,
    Almonds 1 cup slivered

Directions

Prepare noodles as per instructions
heat 2 tbsp oil
Add: egg scramble slightly stir until cooked through
Add: calamari & stir until cooked through
Add: 2 tbsp oil--scallions, mushrooms, peppers, shrimp
Stir fry until hot
Add: Pkg of Pad Thai Sauce mix then add noodles heat through
Serve--sprinkle almonds on top
