    1 lb ground beef
    1 tablespoon olive oil
    1 onion, chopped
    2 cans Rotel
    2 cans black beans, drained
    2 cans corn, drained
    32 oz Velveeta, cut into cubes


Brown meat in oil with onions. Add Rotel, beans and corn. Stir until heated through. Add velveeta and stir until melted....making sure not to overheat the cheese. It works well to cook the meat and onions together the day before. Dump everything in the crockpot the next day and take to church....turn on high for about an hour and then down to low or even just keep warm.
