Introduction

Chickpea salad with a fresh zing to it! Chickpea salad with a fresh zing to it!

Ingredients

    Tomatoes cut very small
    Diced fresh italian parsley
    Diced fresh sweet basil
    Crumbed Feta Cheese
    Diced red onion, raw
    Lemon juice freshly squeezed
    Fresh red chillies sliced small
    Chickpeas drained from can and rinsed with water

Directions

Put the tomatoes, fresh herbs, onion and chillies into a large bowl. Fry (with NO oil or butter) ONLY half of the chickpeas. While these are cooking mash the remaining half of chickpeas into a pulp and add the lemon juice, then put this into the bowl containing tomatoes etc. Add the cooked chickpeas and crumb in the feta cheese. Stir this altogether and chill in the fridge before serving!

Serving Size: 5 people for a small meal
