Introduction
My husband needed something to eat for breakfast so I came up with this. It would probably be better if you added in some lightly caramelized sauteed onions but he doesn't like onions. Ingredients

one 15 oz package chicken sausage (extra lean)
one pacage fat free cream cheese
12 large eggs
3 oz frozen spinach (or about 1/4 of 10oz bag)
1 cup Shredded Cheddar Cheese
1/4 t salt
1 T black pepper
1 T garlic powder
Directions
Brown chicken until no longer pink. Defrost spinach in microwave then add into pan with chicken and cook till heated through. Allow to cool (enough to not scramble eggs...or temper eggs in).
In a large bowl combine chicken mixture with eggs, salt, garlic, and pepper.
Heat cream cheese to room temperature (can use micro on a low setting) and mix into quiche mixutre.
Fold in cheddar cheese.
Pour into glass 9x13 baking dish (if you think it might stick use a light coating of olive oil) and bake at 350 until eggs are firm (about 30 minutes).
Serving Size: makes 8 equal servings
