Ingredients

    1 lb sweet potatoes peeled and sliced thin
    2 lg. zuchini quartered then halved
    2 med. onions quartered

    Marinade:
    2 tbs olive or grapeseed oil
    3 basil cubes
    2 tbs minced garlic
    2 tbs red wine
    2 tbs lime juice
    1 tbs each sweet paprika / grilled chicken seasoning
    salt and pepper to taste

Directions

mix well ingredients for marinade then combine with cut vegetables. Place in Zip-Loc or well sealed container. Let marinate for a few hours, turning to coat occasionally. Bake at 180C for 45 minutes.
