Introduction

Decadent. Good on chocolate cup cakes. Tastes like the inside of a peanut butter cup!
Makes enough for 24 cupcakes - you could halve the recipe if you are only making 12.

Ingredients

    1/2 cup (about 75g) Kremelta (vegetable shortening made from coconut)
    1/2 cup crunchy peanut butter
    3 cups icing (confectioners) sugar
    1 tsp vanilla extract
    Water to combine (probably 4 tablespoons or so)

Directions

1. Chop the Kremelta into 1cm cubes. Place in bowl of a stand mixer with the peanut butter and vanilla. Whip on high speed until combined.
2. Add the sugar and mix on low speed until the sugar is incorporated. It will probably look crumbly.
3. Add water, 1 tablespoon at a time, until the frosting comes together and is smooth. You have put in enough water if the frosting is smooth and will hold peaks, but they don't droop.
4. Beat on high speed for 3 minutes
5. Frost cooled cupcakes and decorate with flowers, crushed nuts, dairy-free choc chips, or anything else that takes your fancy!

Serving Size: Makes 24 servings of about 2 tablespoons each.
