    1 large onion - diced
    3 stalks celery - diced
    3 carrots - shreaded
    3 garlic cloves - minced
    salt/pepper to taste
    red pepper flakes to taste
    1 lbs of extra lean ground beef or turkey
    1 can of tomatoe sauce
    2 cans diced tomoates with liquid
    1 package lasagna noodles, no cook


saute onion, celery in oilive oil until transparent, add garlic and carrots, cook for a few minutes (burns easily) add ground beef and brown.

In a bowl place ricotta, eggs, seasonings and whisk together. I always reserve a little garlic and parsley/basil for the mixture - to get the flavors all the way through the dish.

Once meat is cooked add the diced tomatoes and tomato sauce.
Add a cup of sauce to bottem of dish and place first layer of noodles. Then add the meatsauce mixture, sprinkle with some Parm and another layer of noodles. Use the ricotta mixture and the next layer and spread evenly over the noodles, sprinkle some parm and noodles on top.
Top with meatsauce, cover with foil and bake for 50 mins at 375 degres. Remove from oven and remove foil, top with cheese and bake until melted.

Serving Size: makes 15 servings in 9x13 pan
