    1/2 cup whole wheat flour
    1 cup all purpose flour
    3/4 cup ground flaxseed
    3/4 cup oat bran
    1/2 cup brown sugar
    2 tsps baking soda
    1 tsps baking powder
    1/4 tsp slat
    2 tsps cinnamon
    1 1/2 cups shredded carrots
    1 cup pineapple tidbits (drained)
    1/2 cup raisins
    1/2 cup Egg Beaters
    2 tbsp unsweetened applesauce
    1 tsp vanilla
    1 cup Rice Dream Soy Milk
    1 tbsp lemon juice


Makes 12 large muffins

Preheat oven to 350 degrees.

In large bowl, mix flours, flaxseed, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon.

Stir in carrots, pineapple tidbits and raisins.

Combine eggs, milk, lemon juice, applesauce and vanilla in a separate bowl.

Add liquid mixture to dry mixture. Stir until moist (mixture will be lumpy).

Coat muffin tin with sesame oil.

Pour batter in muffin pan.

Bake for 15 - 20 minutes until golden brown.
