Ingredients

    *Egg Whites by All Whites, 100% liquid egg whites, 8 cup
    Spinach, fresh, 1 cup
    Mozzarella Cheese, part skim milk, 2 oz
    Onions, raw, 1 cup, chopped
    Green Peppers (bell peppers), 0.5 cup, chopped
    Mrs. Dash (R) Lemon Pepper Seasoning Blend, 0.25 tsp

Directions

Add all ingredients together minus cheese. Pour into a measuring cup for easy distribution. Spray muffin pan, and fill each cup, adding a sprinkle of cheese on top. Cook at 350 degrees for 15 minutes. Add salsa for a great breakfast.

Serving Size: Makes 12 mini frittatas.
