I listed the most common ingredients I use. I tend to change it up some since we eat this about once a week. If you want to add a kick to it then try adding Thia Chili sauce, red chilis, or chili power. I serve this with soba noodles, rice noodles, or steamed brown rice. Ingredients

5 cups of baby bok choy
1 pound eggplant
1 bell pepper (any color)
1/2 onion
1 cup snow pea
1 pound chicken breast
3-5 garlic cloves
mushrooms (any kind will do but I prefer Ekoni since they look like the rice noodles when the dish is mixed)
oyster sauce, fish sauce, and soy sauce to taste (recipe is calculated on 3,1,1 respectively)
Prefered spices such as red chilis or chili powder
Directions
Heat skillet over medium heat. Saute onion and bell pepper. Add chicken.
Add any dense veggies such as carrots, eggplant, or large cut broccoli. When almost steamed, add less dense veggies such as bopk choy, snow peas, and mushrooms. Add sauces. Serve with prefered nooodles or rice.
