    Pie Crust
    1 cup flour (OR 1/2 white and 1/2 wheat) Plus up to 1/2 cup
    2 Tbsp sugar
    1/2 tsp salt
    1/3 cup butter
    3 Tbsp cold water

    1.5 -- 2 sweet potato
    1 Tbsp sugar
    sprinkle salt
    2 egg
    1 Tbsp milk
    1/2 tsp vanilla


Makes about 16-18

Preheat oven to 350 degrees.
For the pie crust:
Mix dry ingredients. Cut butter into dry ingredients and mix until it makes a crumbly mixture. Add a small amount of water and mix until a ball forms. If it is too sticky, add up to 1/2 cup more flour. Set aside.

For filling:
Boil 1 sweet potato until a fork inserts easily. Transfer into a bowl. Here you can choose to peel the pieces, but I usually leave them in (More fiber!). Mash the sweet potato, combine the remaining ingredients. The mixture should be slightly thicker than pudding (-ish).

Cut the ball of crust in half and roll one half into a circle. Cut into about eight triangles. Take each triangle and drop some of the filling inside. Fold up the corners and pinch shut. Viola! Samosa! Do this for the rest and bake for about 14 minutes, or until LIGHT brown.

As they can be a tad dry, you can bake them with some whipped egg on top OR melt a tiny bit of butter on top when they come out.
