    2 lbs (about 5 cups) dried navy beans
    1 1/2 lbs smoked ham hocks
    1 onion, chopped
    4 carrots, peeled and chopped
    2 tsp dried thyme
    Salt & pepper to taste


1. Sort the beans, removing any debris and broken beans. Transfer to a colander and rinse with hot water until slightly whitened. Pour beans into a large pot with a lid and add 2 quarts hot tap water. Bring to a boil over medium-high heat; cover and reduce heat to low; simmer for 1 hour. Drain beans into a colander; rinse with cold water. Return beans to pot.

2. Add ham hocks, onion, carrots and 2 quarts fresh hot tap water; bring to a boil. Reduce heat to simmer, cover and cook for 3 hours. Remove ham hocks to cutting board to cool. Allow soup to continue simmering.

3. Remove meat from ham hock bones. Dice and return to the soup, discarding gristle and bones. Add thyme. Season as desired with salt and pepper. Simmer for 30 minutes longer, then serve.
