    Anchovies, 4 fish

    Black pepper, to taste

    2 Chicken breasts

    3 Fresh garlic cloves

    Low-fat cottage cheese, 100g or 3 oz

    Rosemary, 1 sprig

    Small red onion

    1 Thyme, 3 sprigs


Place the 4 anchovies in oil onto a sheet of kitchen roll paper (paper towel) to absorb as much oil as possible.
Chop up the chicken breasts into 1 inch cubes.
Oil a frying pan and wipe it out with kitchen roll paper (paper towel).
Turn the heat on medium-low, and add chicken.
Chop up the rosemary, thyme, garlic, and onion very finely.
When the chicken is nearly cooked (white), add the onion and garlic to the chicken.
Chop up the 4 oil-less anchovies into 1/4cm (1/8 inch) pieces.
Add the cottage cheese to the chicken in the pan, mix and heat up for 3 mins.
Add the herbs and anchovies to the mixture - cook this for 2 more minutes, and serve hot.
