A little moister meatloaf mixture is easy when you put it in a mini muffin pan. A little moister meatloaf mixture is easy when you put it in a mini muffin pan.
Number of Servings: 19


    1 lb lean ground meat (I used Chicken)
    2/3 c couscous unprepared
    2 eggs
    1 T Canola oil
    1/3 c shredded sharp cheese
    1 T parmesean cheese shredded


Pre heat oven to 350
Mix eggs, oil and 1/3 c water in a separate bowl
Measure cous cous into big bowl for later mixing
Add spices, salt to taste and stir into couscous for even flavor
Add meat and mix well with couscous and seasonings
Pour in egg mixture and mix well, should not be dry when mixed
Scoop into individual mini muffin pan
Top with shredded cheese and a little parmesean
Back for 30 minutes until top is nice and brown
Serve with condiments on side if you like.
