    Bicarbonate of soda, 1 tsp
    Black Pepper, 1/4 tsp
    Chicken breast, skinless, boneless, butterflied
    Lemon juice, 1 tbsp
    Rosemary, 2 tsp needles, roughly chopped
    Salt, 1/2 tsp


Brine butterflied chicken breast in one cup of water with salt. Remove after five to ten minutes, then rub with rosemary and pepper.

Place a non-stick pan over high heat and wait until it's hot.

Pan fry the butterflied breast, alternating between sides every half a minute until the chicken is cooked. This should take 4-5 minutes.

Squeeze lemon juice over and serve immediately.
