Introduction
This is a vegetable condiment to have on hand for many uses. You can add this to a sandwhich, salad, rice, potatoes, meats, soups, and more. Ingredients

Cauliflower, raw, 1 cup chopped into little flowerettes
Carrots, raw, 1 cup, chopped
Celery, raw, 1 cup, diced
*Peppers, sweet, red, fresh, 1 cup, chopped
Garlic, 3 clove minced
*Pompeian Extra Light Olive Oil, 2 cups (approx.)
Hain Iodized Sea Salt, 1/4 cup
*Water bottle w/ filtered water, 5 cups
Oregano, ground, 1 tbsp
*Crushed Red Pepper Flakes, 1 tsp (optional)
Directions
Put water and salt into a large mixing bowl. Add all the chopped veggies and garlic and stir. Cover and place in refrigerator overnight.
Pour vegetables into a collander to drain water off and rinse veggies well.
Place veggies in a mason jar. You may need up to 4 mason jars to fit all the veggies in.
Put a tsp. of dried oregano and a sprinkle of red pepper flakes (optional) on top of the veggies in the jar and pour light olive oil in the jar until full.
(You can choose to use fresh oregano leaves, just mince and increase to 1 tbsp. of fresh herb to each jar).
The longer it stands in oil, the more flavorful.
Dress your sandwhich, salad, rice, potatoes, meats, etc. with this Sicilian Veggie condiment.
