Ingredients

one red pepper (150 grams) chopped
one green pepper (150 grams) chopped
half purple onion (150 grams) chopped
1 tbsp olive oil (if you use non-stick spray and no oil, it pretty much takes out all the fat calories, but I like the flavor with the olive oil)
tsp salt (to taste)
2 tsp pepper (to taste)
Directions
heat olive oil in skillet, add peppers and onions, saute about 5 min until slightly soft, salt and pepper to taste
Serving Suggestion:
freeze in small portions (you can make smaller serving sizes if desired) in a microwave safe bowl;
for a quick and easy breakfast, pull the bowl out of the freezer, heat pepper and onion mix in the microwave, then add 1-2 fresh eggs, mix with a fork, and microwave for an additional 45-60 sec
Result:
Perfect healthy scrambled eggs without the mess of chopping anything or dirtying a pan!
