    1 cup cake flour (2 Tabsp. cornstarch in cup and fill with all purpose flour)I use Whole wheat
    1 1/4 cups sugar
    12 egg whites or 1 1/2 cups at room temp.
    1 1/2 teasp. vanilla
    1 1/2 teasp. cream of tartar
    1/2 teasp. salt


Preheat oven to 375 degrees. Sift together flour and 1/2 cup of sugar, set aside. In a large bowl, whip the egg whites, cream of tartar, vanilla and salt to medium stiff peaks. Gradually add the remaining 3/4 cup sugar while continuing to whip to stiff peaks.
When it has reached its maximum volume, fold in the sifted ingredients gradually one third at a time. Do not over mix. Pour batter into grease free pan.
Bake in tube pan 40-45 minutes
2 loaf pans 25-30 minutes
