    10 red potatoes
    1 large red pepper
    1 large green pepper
    1 large yellow pepper
    pesto sauce (from a jar. I use Classico; you can find it in any grocery store)


1. Steam the potatoes for about 20 minutes so the skin remains intact. Cool in the fridge for two hours.
2. Dice peppers and potatoes. Toss together with the pre-jarred pesto. Chill another hour before serving.

Serving Size: Makes 8 servings (roughly)
